Procedure for making Aate ka Halwa

  1. Place a deep frying pan over medium heat and pour ghee in it.
  2. As soon as the ghee heats up, add the wheat flour. Immediately start stirring.
  3. Roast the flour in the ghee on low heat until it starts leaving the ghee at sides. This should take about 25 – 30 minutes. Remember to lower the heat after the first 5 minutes or else the flour will burn. The flour will turn to a nice brown color.
  4. Meanwhile, pour the water in a saucepan and place it over medium heat.
  5. Add the sugar to the water and stir. Keep stirring until the sugar dissolves completely.
  6. When the flour is properly roasted (leaves the ghee at sides), pour in the sweet water into the frying pan very carefully while stirring continuously to avoid lump formation.
  7. Keep stirring properly to incorporate all the water in the flour until a thick, brown halwa is obtained.
  8. Transfer to a serving dish and garnish with dry fruits. You can also choose to mix the dry fruits in the halwa after adding the water. Serve hot!
