  • Red chili powder (optional)                                                Pinch
  • Roasted Cumin seeds powder                                            ½ teaspoon
  • Lemon juice                                                                      1 teaspoon
  • Tamarind Chutney                                                            1 ½ teaspoon
  • Green Coriander chutney                                                  1 teaspoon
  • Cooking Oil                                                                       2 tablespoons

Procedure

  1. Put a small deep frying pan or wok over medium heat and put oil in it.
  2. As soon as the oil heats up add the potato pieces and immediately reduce the heat. Let the potatoes deep fry on low heat for about 5 – 7 minutes and then increase the heat to medium. Fry them to a golden brown color.

Tip: Frying on low heat at the start ensures the potatoes get cooked completely.

  1. When done, transfer the fried potatoes to a plate lined with tissue papers.
  2. In the same oil add groundnuts and fry them for about 1 minute. Do not let them blacken. When done, transfer to the plate with paper towels.
  3. In a mixing bowl combine the chopped onion, tomato, green chili, coriander, fried potato and fried groundnuts.
  4. Sprinkle salt, red chili powder (if using) and roasted cumin seeds powder. Drizzle lemon juice.
  5. Also add both chutneys and then give the bhel a nice toss to combine all flavors.
  6. Finally transfer the bhel to a serving dish and sprinkle aloo bhujia on top. Serve immediately.

Tip: You may also add the aloo bhujia while giving the bhel a toss to combine it together with everything else.
